1 box (18 1/2 oz) German chocolate cake mix
2 lg eggs
1 c. low fat buttermilk
1/2 c. water
1/4 c. vegetable oil
1 TBS cider vinegar
1 TBS red food coloring
Fresh raspberries for garnish if desired


CREAM CHEESE FROSTING:

1 (1lb) box confectioners' sugar
1 cup butter, softened
8 oz cream cheese, softened
2 tsp vanilla

Directions:
Preheat oven to 350. Grease/flour Bundt pan. Put cake mix into large bowl of electric mixer. Add eggs, buttermilk, water, oil, vinegar. Then food color. (Turn off mixer when adding food color to avoid 'painting kitchen with it'.) Beat 2 minutes at high speed. Pour batter into pepared pan. Bake 30 - 40 minutes until cake tests done. Allow to cool at least 30 minutes; then invert onto serving plate and frost cake.

Frosting:
Combine all ingredients. Adjust frosting consistency if desired by adding confectioners' sugar to thicken or small amount of milk to thin.

Source suggests: Frost top third of cake, and allow frosting to drift down sides. A portion of deep red cake will show underneath. Serve at once or refrigerate, covered with a dome, until ready to serve, up to 24 hours.
