4 c. day old bread cubes;
3 eggs, slightly beaten;
3 c. milk;
1/2 c. sugar;
1/2 c. raisins;
2 Tbsps. unsalted butter, melted;
1 lemon, peel grated;
1/4 tsp. salt;
1/8 tsp. ground nutmeg.

Preheat your oven to 350F. Arrange bread cubes in a shallow baking pan in a single layer. Bake 10 minutes to lightly dry bread, shaking pan or stirring cubes a couple of times. Meanwhile, combine your remaining ingredients, except the nutmeg, in a bowl. Stir to dissolve sugar. Place dried bread cubes in a separate bowl and pour milk mixture over them, stirring all well and letting soak 10 or so minutes. Pour all into well buttered 1-1/2 quart casserole. Sprinkle with 1/8 tsp.nutmeg, more or less. Set casserole in a shallow baking pan filled with 1 inch hot water. Bake, uncovered, 1 hour, or until knife inserted in center comes out clean. Remove from water bath and let cool 10 minutes. Serve warm, with butter, ice cream or a simple thin lemon confectioners sugar frosting to drizzle on top.

Warm and Cozy from the get-go! Definately a comfort food, on a cold evening. While the pudding is in the oven is a good time to take a warm shower or bath, climb into your warm pj's, ask your mate to do the same and put in a movie, so you can both enjoy each others company along with this yummy and hot cups of lemon tea. Ahhhh!
