1 cup sugar
1 cup canned milk or light cream
1/4 cup butter
Pinch of salt
1 cup white syrup
1 teaspoon vanilla

Directions:
Directions:
Boil the sugar, salt and syrup to 245 (hard ball stage) stirring occasionally. Add butter, then gradually add milk so mixture doesn't stop boiling. Stir constantly and cook rapidly to the firm ball stage. (242) This mixture is thick and sticks easily. Add vanilla and pour into small buttered pan. When cool cut with heavy sharp knife. Pieces can be wrapped in waxed paper.
To make chocolate carmels add 1 ounce bitter chocolate after having added the milk then proceed as above.
