1 package yeast
1/4 cup warm water
1 cup scalded milk
1/4 cup shortening
1/4 cup sugar
1 teaspoon salt
1 cup mashed potatoes
1/2 teaspoon nutmeg
2 beaten eggs
5-1/2 cups sifted flour
GLAZE
1 pound confectioners sugar
6 tablespoons water
1 tablespoon vanilla
or
1 pound confectioners sugar
7 tablespoons lemon juice

Directions:
Directions:
Dissolve yeast in warm water. Combine milk, shortening, sugar and salt. Cool until lukewarm. Stir in yeast, potatoes and eggs. Gradually add enough flour to make soft dough. Turn onto floured surface and knead until smooth. Place in greased bowl. Cover. Let rise in a warm place until doubled, about 1-1/2 hours. Roll to 1/2 inch thickness, cut with 3 inch doughnut cutter. Cover and let rise until doubled, about 30 minutes. Fry in deep hot oil (375). Drop hot doughnuts into glaze. Place on cooling rack until glaze is set.
