2 lbs. boneless skinless chicken breast(cut in cubes)
1tbsp. oilve oil
1/2 cup diced red bell pepper
1/2 cup diced yellow onion
1 oz. pkg. taco seasoning
2 tbsp. chili powder
tsp. fresh garlic
1 tsp. white pepper
8 cups water, 1 cup long grain rice
1 (14oz can)white hominy
1/2 cup diced celery
1/2 cup corn
1/2 cup peas
1/4 cup hot sauce
2 cubes of beef bouillon
1 cube chicken bouillon.

Directions:
In a large sauce pan combine oilve oil,red pepper,garlic onion over heat. Saute until tender approx. 5 minutes Add cubed chicken and dry spices(taco seasoning,chili powder white pepper and salt)Continue cooking and stirring until chicken is cooked through. Add rest of the ingreidents stirring until soup comes to a boil. Reduce heat to simmmer and cook for 1 hour.

this dish is extremely spicy. Cut chili powder by half. best served with corn or flour tortillos.
