1/2 c shortening
1 1/2 c white sugar
1/2 tsp salt
1 egg
1 tsp soda in 1 c sour milk
2 c plus 1 T flour
3 c rhubarb - cut fine
1/4 c colored candy sprinkles

Directions:
Directions:
Preheat oven to 350 degrees. Cream shortening, add sugar and mix well. Add salt and beat in egg. Add soda and sour milk mixture alternately with flour. Stir in candy sprinkles and rhubarb. Pour into 9 x 13 inch pan. Mix topping ingredients and sprinkle over cake batter. Bake for 45 minutes.

Topping;
1c sugar
1/3 c nut meats
1 tsp cinnamon

Ellen is Mom's niece and they had a close relationship. Mom and Ellen visited on the phone, the two couples played cards, and both Mom and Ellen were good cooks and exhanged many tasty recipes. This is one of them.
