1 lb of pork tenderloin
salt
2 tbs flour
3 tbs olive oil
2 large Yukon Gold potatoes
1 cup onion - large slices
2 poblano chilies - large dice
1 red bell pepper - large dice
2 cups orange juice
2 cups coca-cola

Directions:
Directions:
Cut pork and potatoes into 2" cubes. Season pork with salt and coat with flour. Heat olive oil in Dutch oven, add pork and potatoes and saute until browned (~ 4 min,). Add the onion, chilies and peppers and continue cooking until onion is translucent (3 - 5 min). Add orange juice and cola, reduce heat and simmer 40 - 50 minutes, or until liquid has reduced to a saucy consistency. Serve over rice (or pasta) with a salad or veggie on the side.
