3 pints whipping cream
2 oz. white chocolate
1 pint milk
1 c sugar
4 whole eggs
15 egg yolks
1 loaf french bread, sliced to 1 1/2" slices, dried in oven

8 oz white chocolate
3 oz whipping cream

Directions:
Directions:
Use a 13 x 9 x 2 rectangle pan.
Heat whipping cream, milk and sugar. Add white chocolate, when chocolate is melted remove from heat.
Mix eggs and yolks.
Temper egg mixture into cream, chocolate, sugar and milk mixture.
Place bread slices in baking pan - pour 1/2 mixture over bread and let settle. (Let the bread soak up mixture) then top with the rest of the mixture.
Cover with foil and bake 1 hour at 275 - remove foil and bake another 25 minutes until top is golden brown at 250.
To serve: spoon hot out of pan or let cool at room temp - then place in refrigerator for about 45 minutes - loosen sides and invert pan - cut into squares. Top with sauce.

Sauce: Melt white chocolate in double boiler - remove from heat and mix in heavy cream. Spoon over bread pudding

If six to eight people eat this much (rich) bread pudding they won't be able to move. This is a wonderful dessert for guests as it can be made early and served either warm or cold.

I usually just use 9 eggs instead of that many egg yolks. I think the yolks make the pudding too "eggy".
