1 1/2 c fresh bread crumbs.
1 c parmesan cheese grated.
1 Tbl dry rubbed sage.
1 tsp lemon peel grated.
2 large eggs.
1/4 c all purpose flour.
4 bone in center cut pork chops about 1" thick.
2 Tbl butter.
2 tsp oil.

1/4 cup sugar and salt

THE SECRET IS TO BRINE THESE PORK CHOPS FOR ABOUT 30 MINUTES FIRST.

Put sugar and salt (I throw in a bay leaf too) in a bowl. Add hot water to disolve. Then chops and cold water to cover. After 30 minutes. Rinse. They should feel slimy. Dry off.

Mix bread crumbs, cheese, sage and lemon set aside.
Whisk eggs in med bowl set aside.
Place flour on paper plate season generously with pepper.
Coat pork chops on both sides with flour, shake off excess.
Dip chops into egg, then coat on both sides with bread crumb mixture.

Melt butter with oil over med-high heat sear pork chops on both sides. This only takes a few seconds for the crust to become golden.
Heat in a 425 degree oven for 20 min on a broiler pan or rack.

I have friends that request these chops all the time. They will be a hit if you do not burn the crust. You can do the searing early and then bake them for 20 minutes later.
