2-1/2 cups shredded cooked chicken
2/3 cup salsa
1/3 cup green onions
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano
6 flour tortillas (8 inch)
1/4 cup butter or margarine,melted
2 cup (8 ounces) shredded monterey jack cheese
(I use 1 cup cheddar and 1 cup monterey jack)
sour cream, extra salsa and guacamole

In a skillet, combine first 6 ingredients. Cook, uncovered, over medium heat for 10 minutes or until heated through, stirring occasionally. Brush one side of the tortillas with butter. Spoon 1/3 cup chicken mixture over half of the unbuttered side of each tortilla. Sprinkle with 1/3 cup cheese; fold plain side of tortilla over cheese. Place on a lightly greased baking sheet. Bake at 475 for 10 minutes or until crisp and golden brown. Cut into wedges; serve with sour cream, salsa and guacamole.

I look for rotisserie chicken on sale at the grocery store. I buy it and we eat it for a meal one night. Then I pick off the leftover meat and shred it. I keep it in a baggie and then use it for this recipe sometime during the week. That way the chicken is all ready to go.
