5 medium size potatoes 1/2 c hot milk 4 tbsp butter 1 1/2 tsp salt 1/8 tsp pepper 1/2 c grated Parmesan cheese 1/2 c whipping cream 2 egg whites
Peel and quarter the potatoes; cook in boiling salted water until tender. Drain well and mash smooth. Beat in milk, butter, salt pepper and cheese. Whip egg whites until stiff; whip cream until stiff. Fold egg whites and cream into potato mixture. Turn into a buttered 1 1/2 quart casserole. Bake in a preheated 400º oven for 30 minutes.
