1 (14 3/4 oz.) can salmon
12 saltines - rolled to crumbs
2 eggs
olive oil

Directions:
Directions:
Remove salmon from can and clean by removing skin, bones and unwanted tissue. Some soft bones can remain for calcium content. Mix salmon, crushed saltines and two eggs with hand in bowl. Shape into 4 - 6 patties and fry until golden brown in olive oil or oil of your choice.

This is a family favorite and is good served with a salad for a light meal, or with macaroni and cheese for a hearty meal. Any leftovers are good served cold the next day either over a salad or as a sandwich.
