2 egg whites
3/4 c sugar
dash of salt
1 tsp almond extract
7 oz shredded sweetened coconut

Directions:
Directions:
Preheat oven to 350
Whisk all ingredients in medium bowl except for flour and coconut, until well blended. Add flour and blend well. Fold in coconut. Drop by either tbsp or tsp onto cookie sheet 1 inch apart. Bake for 15 minutes or until tops are brown. Cool completely on cookie sheet.

This works best with a Silpat pad on your cookie sheet. If you do not have one, you can use wax paper on the cookie sheet and just loosen the cookie while it is cooling
