3 medium potatoes, peeled and grated
1 12 oz can corned beef, finely chopped
1/2 c flour
2 eggs, slightly beaten
1 c milk
salt and pepper
3 tomatoes, sliced
2 tbsp grated cheddar cheese
2 tbsp chopped parsley

Directions:
Directions:
Mix first 5 ingredients. Season with salt and pepper. Pour into well-greased 13x9x2 baking pan. Bake at 400 for 30 minutes. Remove from oven and top with tomatoes. Sprinkle with cheese. Bake 10 minutes longer, or until cheese is melted. Sprinkle with parsley.
