3 tablespoons butter, plus more for baking dish
3 pounds russet potatoes, peeled and chopped

3 large egg yolks
1 1/4 cups milk
1 1/2 cups coarsely grated Swiss Cheese or other type of cheese (6 ounces)

Directions:
Directions:
Preheat oven to 400. Butter a shallow 1 1/2 quart baking dish. In a large pot, boil potatoes about 20 minutes until done and drain potatoes. In same pot, add butter and mash until creamy. Cool slightly. Fold in egg yolks, milk, 1 1/4 cups cheese and 2 teapoons salt. Spread in prepared dish.

Top with remaining 1/4 cup cheese. Bake until golden brown - about 30 minutes.
