1/4 tsp. yeast
2 c. water
2 egg whites
1 tbsp. olive oil
1 tbsp. sugar
1 tsp. salt
1/2 tsp. red wine vinegar
6 c. flour

Directions:
Directions:
Start out by mixing the yeast with 1/2 c. of warm water and just a pinch of sugar. Set aside for 10 minutes or more. In a standing mixing bowl put in egg whites, olive oil, sugar, salt and red wine vinegar. Mix well with wire whip. Fill up the 1/2 cup of water and yeast with water to make a full cup, add to mixture, then 1 more cup of water. Put on mixer and add 6 cups of flour. mix for 5 to 10 minutes. Cut in 1/2 then 1/2 again. Will make 4 12" doughs.
