1 c minced onion
4 tbsp butter
3 c cold mashed potato
1 12oz can corned beef, finely chopped
1 egg, beaten
1/2 c flour
salt and pepper
1/4 c fine dry bread crumbs
Cranberry sauce, optional

Directions:
Directions:
Brown onion slowly in 2 tbsp butter. Add next 4 ingredients and season lightly with salt and pepper. Shape in 10 3 1/2 inch patties 1/2 inch thick. Dip both sides in bread crumbs and brown slowly in remaining butter. Serve hot, with cranberry sauce, if desired.
