5 T. unsalted butter
1/2 c. flour (all-purpose)
1/2 tsp. baking powder
Pinch of salt
1 egg
Grated zest of lemon, if desired
1 tsp. vanilla
1/3 c. sugar
Confectioners' sugar for dusting

Directions:
Directions:
Preheat oven to 375 degrees. Melt the butter over medium heat. Brush a little of the melted butter in the madeleine pan. Reserve the remainder and let cool. Sift flour, baking powder and salt in bowl. Combine the egg, lemon zest, vanilla and sugar and beat lightly. Stir into the flour mixture and beat, without overmixing. Spoon batter into the molds of the prepared pan, filling one half full. Bake for 12 to 15 minutes, until golden and brown at edges. Dust with confectioners' sugar while warm.
