1 2-1/2 to 3 lb bass, cleaned and boned
salt and pepper
1 cup breadcrumbs
1 cup cooked rice
1/4 cup minced onion
1/4 cup chopped celery
1/2 tsp salt
1/2 cup water
2 tbsp lemon juice
butter or margarine
lemon slices
paprika

Directions:
Directions:
Sprinkle inside of fish with salt and pepper. Combine breadcrumbs, rice, onion, celery salt, and water; then stuff bass. Pour lemon juice on fish; dot with butter. Wrap in aluminum foil; bake at 400 for 40 minutes or until done. Garnish with lemon slices and paprika. Serves 4-6

We fried fish most of the time, but bass was a special treat. My children asked me to include this recipe in the Osmon Cookbook.
