2 Tblsp olive oil
2 cloves garlic, chopped
1 small onion, chopped
1 (10 oz) pkg spinach
1/2 lb fresh mushrooms
1 (6 or 7 oz) pkg. feta cheese, crumbled (can be herb and garlic or just plain)
8 oz. shredded sharp cheddar cheese
salt and pepper to taste
6 eggs, beaten
1 cup milk
pastry for 1 deep dish pie crust (I usually use tart pastry)

Preheat oven to 375 deg.
In a large skillet, over medium heat, saute garlic and onion in olive oil until lightly browned, about 7 minutes. Stir in spinach. Once it begins to wilt, stir in mushrooms, feta, and 1/2 cup cheddar cheese. Season with salt and pepper and spoon mixture into pie crust.
In a med bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell.
Bake in preheated oven for 15 minutes. Sprinkle top with remaining cheddar cheese, and bake an additonal 35 - 40 minutes, until set in center. Allow to stand 10 minutes before serving.

This quiche is divine! I usually use a rich tart pastry. This recipe is modified from one I found on allrecipes.com
