2 c flour
1 1/2 tsp baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c crushed pineapple
1/2 c shortening
1 c brown sugar
1 egg
1 tsp. vanilla

Directions:
Directions:
Sift first 4 ingredients. Drain pineapple. Save syrup for icing.

Work shortening until soft. Add sugar. Beat egg in vigorously. Add pineapple and vanilla. Bake. Add flour. When cool cover with glaze.

Glaze - Stir in 2 T pineaple syrup into 1 c confectioners sugar.

This is one of two pineapple cookie recipes Mom collected and may be the recipe Mom baked for her holiday gift plates. It is on a tattered recipe card which shows signs of much use. I've consumed far too many calories in my life in the shape of these treats.
