Batter: 2 c. flour 2 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt 2 eggs 1/2 c. vegetable oil 4 c. sliced apples
Topping: 1 tsp. cinnamon 1/2 c. nuts 1/2 c. sugar
Mix first 7 ingredients. Beat eggs and oil. Add apples. Blend with spoon; do not use mixer after apples are added. Batter will be very stiff, but mix until the dry ingredients are moist. Put in greased 9 x 13-inch pan and sprinkle with topping mixture. Bake at 350º for 45 minutes.
The first time I made this, I thought they must have forgotten some ingredients as it is so dry until you start stirring in the apples. It is well worth it!
