3 c. cooked Uncle Ben's or any other converted rice or brown rice (if you prefer) cooked & chilled;
3 of 4 big red and/or yellow bell peppers, seeded and diced; 1 or 2 big tomatoes, seeded & chopped; 1 c. diced jicama; 3/4 c. sliced green onions; 1/4 c. chopped cilantro; 1 can black beans, (15 oz or so) rinsed & drained; 1c. diced cooked chicken or turkey (good place for leftovers); 1 c. bottled or homemade thick and chunky tomatoe salsa; 2 T. fresh lime juice; 2 T. olive oil; salt & freshly ground pepper to taste; large romaine lettuce leaves; lime wedges and black olives to garnish and serve, if desired.

Combine first 8 ingredients together in large bowl and mix well. Combine next 5 ingredients (salsa, lime juice, oil and salt & pepper) in small bowl. Mix well and combine with salad ingredients in large bowl, then toss all well.(Your salad can be served right now or cover and chill for up to 8 hrs before serving). Serve your salad over lettuce leaves in individual salad bowls or in a large salad bowl (so guests can serve themselves) and garnish with some lime wedges and whole black olives, if the spirit moves you.
