lard or cooking oil
2 or 3 young squirrels
flour, salt, and pepper

Directions:
Directions:
Clean and dress squirrels, cut up. In bowl mix flour and
seasonings. Coat squirrel pieces lightly. Heat oil in large frying pan to hot, add squirrel and brown lightly, turn to brown other side, cover and cook until tender. Takes about 15 minutes.

Editor's note: We ate the head, including brains and tongue. White beans and fried potatoes usually accompanied this dish. These were the days before we bought much hamburger meat from the supermarket.
