1/2 pound ground beef - your pick
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter
3 cups chicken broth
4 cups diced peeled potatoes (1-3/4 pounds)
1/4 cup all purpose flour
8 ounces processed American cheese block - cubed (2 cups)
1-1/2 cups milk
3/4 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Start with a 3 quart saucepan and brown the beef and drain off the grease and set off to the side. Using the same pan saute with 1 tablespoon butter the onions, carrots, celery, basil and parsley until tender. This will be about 10 minutes. Add broth, potatoes and beef and bring to a boil. Reduce heat to simmer, cover and gently cook for about 12 minutes. Make sure the potatoes are tender. In a small skillet melt the butter. Add flour and cook while stirring for about 4 minutes or until mixture is bubbly. Add this to the soup. Bring to a boil and stir for about 2 minutes. Reduce to low heat. Add the cheese, milk, salt and pepper. Stir until all the cheese melts. Remove from heat.
