1 lb. lasagna noodles or 2 8oz. oven ready lasagna noodles
2 1/2 lbs. ground beef or turkey
2 lbs. sweet Italian sausage
32 oz. part skim ricotta cheese
24 oz. mozzarella cheese
1 cup grated romano or parmesan cheese
tomato sauce
3 eggs
parsley
flavored breadcrumbs
1 onion

Directions:
Directions:
If not using oven ready noodles, cook noodles according to the package. Drain.
Cook sausage.
Mix together ground meat with flavored breadcrumbs, diced onion, egg, and one cup of spaghetti sauce. Either make into meatballs and bake or brown the mixture in a frying pan.
Mash together the sausage and meat mixture.
Add 3 eggs and parsley to the ricotta cheese. Mix.
Layer ingredients in a 12 x 18 inch lasagna pan:
Sauce, noodles, ricotta cheese, meat, mozzarella, romano cheese. Repeat layers.
On the last layer: Add sauce, mozzarella, and romano cheese. Cover with foil.
Cook in oven for about 60 minutes at 375. Uncover the last 15 minutes.

This recipe can also be used to make 2 12x 18 pans. I have also substitued sauted sliced zuccini, yellow squash, peppers and onions to create a vegetable lasagna. I have served this many times at family parties.
