4 big portobello mushroom caps; olive oil; salt & freshly ground pepper; 4 slices (enough to cover mushroom caps completely); 8 slices Italian bread, sliced 1/2 inch thick; 1 (12 oz) jar of roasted red pepper strips, drained; 1 cup low-fat plain yogurt; 1/4 cup roasted garlic*; 1/2 cup fresh basil.

Brush the mushroom caps with good amount of olive oil and sprinkle with the salt and pepper, to taste. Grill over medium heat grill for 10-15 minutes and cover each with mozzarella cheese last minutes or so on the grill. Place a slice or two of the red pepper on cheese after you're through grilling caps. Set aside. Puree yogurt, garlic and basil in blender til smooth. Brush olive oil on both sides of bread and grill til toasted. Assemble and enjoy sandwiches. Yum!

*To roast your garlic, cut pointed end off garlic cloves; place all on square of foil, drizzle with olive oil and fold up foil to seal. Bake at about 425 degrees F for about 30 minutes while you are doing everything else; Cool and squeeze pulp from garlic cloves to mix with yogurt and basil for sauce. I'd rather have one of these sandwiches for lunch than just about anything else!
