This recipe for Sweet & Sour Chicken, by Debra White, is from Beyond the Beans,

3 lbs chicken breast 1 bottle Russian dressing 1 jar apricot jam or orange marmelade 1 pkg onion soup mix 1/4 c. water
Place chicken in a baking casserole. Mix together remaining ingredients. Pour over chicken. Bake at 350 degrees for 1 hour, covered with foil. Remove foil and continue baking for a half hour longer. Garnish with green pepper and pineapple. Serve over rice.
