1 can sweetened condensed milk
1 large bag coconut (approx 6 cups)
1 tsp vanilla extract
½ tsp almond extract

Directions:
Directions:
Preheat oven to 325°. Lightly coat non-stick cookie sheet with no-stick cooking spray (Teflon coated pans work best). . Add extracts to sweetened condensed milk, stir gently and pour over coconut. Mix well by hand-it will be gooey. Drop by teaspoons onto prepared cookie sheets, 1 inch apart. Cook 10–12 minutes or till light brown on top.(Watch them closely) Remove from pan with a no-stick spatula. (I spray it too to prevent sticking).

These also ship well and were a perfect cookie to send to our cousin Maureen’s husband Ron Swain when he was stationed in Iraq 2004/2005. They stay fresh and tasty even w/out refrigeration for a long time.
