3 pounds small yellow squash
1 small green pepper,minced
1/4 cup minced onion
4 tablespoons margarine
2 teaspoons sugar (optional)
1 cup whole milk
4 slices dry toasted bread
1 1/2 cups shredded sharp cheddar cheese, divided
3 eggs, beaten
Few drops hot red pepper sauce

Directions:
Directions:
Slice squash; combine with green pepper and onion in boiling, salted water and cook until squash is tender. Remove from heat and drain. Add margarine and sugar; stir until melted.
In a small bowl, combine milk, crumbled bread, 1 cup cheese, eggs and pepper sauce. Add to squash mixture and mix well. Divide mixture evenly
between 2 (2-quart) casseroles or 1 (4-quart) casserole. Sprinkle remaining cheese over top, cover and bake at 350 degrees about 20 minutes.
