Pumpkin Roll:

3 eggs
1 tsp baking soda
2/3 cup Libby's pumpkin
3/4 cup flour
2 tsp cinnamon
1/3 cup chopped nut (optional)
1 cup sugar



Filling:

1 cup 10X sugar
8 oz. cream cheese
4 tbsp soft butter
1/2 tsp vanilla

Directions:
Directions:
In a large bowl, beat eggs and remaining ingredients (for the roll) . Spread on greased jelly roll pan. Bake 10 - 12 minutes at 375F. Turn over on a linen towel to cool. Pat 10X sugar on the towel first and then on top of the roll. Cool for 1/2 hour. Mix the filling ingredients and spread onto the cooled roll. Roll up and chill overnight.
