1 Lb ground beef
1 egg
1/2 tsp salt
1/2 tsp Italian seasoning
1 (8oz) can tomato sauce
1 (2.8oz)can Durkee French Fried Onions
4 - 5 red skin potatoes (sliced thin)
1 (16oz) bag frozen broccoli, corn and red peppers (thawed and drained)

Directions:
Directions:
Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can onions. Form into 3 mini loaves. Place into a large baking dish. Place sliced potatoes around the loaves. Bake covered at 375F for 35 minutes. Place the vegetables around the loaves and stir to combine with potatoes. Lightly season with salt and pepper. Top the loaves with the remaining tomato sauce and bake covered an additional 15 minutes. Top the loaves with remaining onions and bake uncovered 5 minutes longer.
