3 Tsp of corn starch
3 Tsp of flour
1 cup of sugar
3 eggs
3 cups of milk
pinch of salt
1 Tsp of butter
1 tsp of vanilla

Chocolate Cream (3 Tsp of cocoa)

Peanut Cream ( 3 Tsp of peanut butter)

Coconut ( 2/3 cup of coconut)

Banana ( 2-3 bananas sliced)

Combined cornstarch, flour, sugar and salt. mix well add the milk and egg yolks ( reserve whites for the meringue)
Mix to remove any lumps. Cook over medium heat, stirring constantly so that it doesn't stick and scorch, until it boils and thickens. Remove from heat and add the butter and vanilla. At this point you would add you other flavoring like peanut butter etc. If you are making chocolate pie you would add the cocoa with the dry ingredients. Pour filling in a pre-baked 9 inch pie shell and top with meringue. On the banana we cool the filling and add the bananas to the cold vanilla filling and top with whipped cream.

This is the universal filling that we used to make literally hundreds of pies in Mom's Kitchen Cafe. The first Thanksgiving that we owned the cafe we made 75 pies the day before Thanksgiving for take out.
