"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Slice jalapenos in half and clean, taking all the seeds out. Cook sausage and chop into small pieces. Drain sausage and mix with the cream cheese. Spoon mixture into the sliced jalapenos.
Cut the package of bacon in half. Wrap 1/2 slice of bacon around each stuff jalapeno. Bake at 375º for about 15-20 minutes or until bacon is cooked.
Takes a little while, but well worth it!!
