1 1/4 rolled oats
1/4 c. bran flakes
3/4 c. unbleached flour
1/2 c. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 beaten egg
2 c. mashed bananas
1/4 c. soybean oil
1/4 c. oil
1/4c. raisins
1/4 c. ground-roasted soy nuts
1/2 c. soft cream cheese

Preheat oven to 375 degrees. Grease 10 to 12 medium muffin cups. In large bowl, combine all dry ingredients. Stir in egg, bananas, and oils and fold in raisins and nuts. Place small amount into each muffin cup and add 1 tsp. cream cheese in center, then pour remaining batter into prepared muffin cups and bake for 20 to 25 min, or until toothpick inserted in center comes out clean. Let cool in pan for at least 15 min. These muffins can be frozen for up to one month.

I have used walnuts, dried cranberries, and other flours for the soy flour such as oat bran, wheat bran, flax flour. I prefer them when warm.
