5 pound rolled cross rib beef roast
salt and pepper

Sprinkle beef with salt and pepper. Insert meat thermometer into center of roast. Let beef stand at room temperature 20 to 30 minutes. Preheat oven to 375. Place roast on rack in shallow open pan. Leave roast in oven one hour. Turn off heat. Do not open oven door for one hour. THIS IS IMPORTANT. During resting period the beef continues to cook slowly and evenly distributes heat throughout the beef.

Turn oven regulator to 300. Allow roast to reheat 30 to 40 minutes until beef has reached desired internal temperature. Beef will be pink and juicy all the way through when thermometer registers 130 degrees.

Should you desire beef cooked very rare, remove from oven a few minutes sooner. If you prefer well-done beef continue cooking until it is just the way you like it.
