3 pounds peeled, deveined medium shrimp
4 tablespoons butter
1 tablespoon oil
6 tablespoons flour
1 16 ounce can tomato sauce
1 cup chopped onions
1 cup chopped celery
1 cup chopped bell peppers
6 cloves chopped garlic
3/4 cup seafood stock (or water)
Juice of 1 lemon
4 bay leaves
1 teaspoon sugar
Salt and cayenne pepper to taste
1/2 cup chopped green onions

Directions:
Directions:
In a heavy pot melt butter. Add oil and saute all seasonings until done (approximately 5 -10 minutes). Add flour and blend well (5 minutes or until color of paper bag). Then add tomato sauce, stock, or water and sugar. Cook over medium heat approximately 30 minutes. Season to taste, add the shrimp (and crabmeat or sausage if desired). Cook another 30 minutes. Serve over rice.
