2 tsp olive oil
3 Tblsp balsamic vinegar
2 tsp Dijon mustard
1 clove garlic, crushed
4 boneless, skinless, chicken breasts
2 cups mushrooms, sliced or halved
1/3 cup chicken broth
1/4 tsp dried thyme, crumbled

Directions:
Directions:
Mix 2 Tblsp vinegar, the mustard and garlic in a bowl. Add chicken breasts and turn to coat them on all sides. Heat 1 tsp oil in a skillet, add the chicken breasts and the marinade from the bowl and saute until cooked through.
Transfer chicken to a platter and keep warm. Heat remaining teaspoon of oil, saute mushrooms for 1 minute, then add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally until mushrooms are deep brown. Serve chicken topped with mushrooms.
