2 medium zucchini, chopped
1 can Italian style diced tomatoes
1/2 medium onion, chopped
1/3 cup grated parmesan cheese
1/2 cup reduced fat Bisquick
1 cup non fat milk
2 eggs
1/2 tsp salt
1/8 tsp pepper

Directions:
Directions:
Preheat oven to 400. Spray a 9 inch pie plate with non stick cooking spray. Saute zucchini and onions until just tender. Layer zucchini and onions, tomatoes, and cheese in pie plate. Stir remaining ingredients together until blended and pour over vegetables in the pie plate. Bake for 35 to 40 minutes or until a knife inserted into the center comes out clean. Cool 5 minutes before serving.
