1 lb. beef tenderloin or sirloin, 2 tb. salad oil, 1/2 c. beef broth, 2 tb. sugar, 1/3 c. soy sauce, 1/2 lb. thinly sliced mushrooms, 1 bunch green onions, cut in 1 1/2" lengths, 2 large thinly sliced yellow onions, 3 stalks diagonally sliced celery, 1 can drained bamboo shoots, 3 c. fresh spinach, steamed rice

Cut beef in strips 1/4" thick and 2" long. Brown meat in oil. Push meat to one side and stir in beef broth, sugar and soy sauce. Place mushrooms, onions, celery and bamboo shoots in sperate section of pan. Cover and simmer 10 minutes. Add spinach and simmer 5 minutes, lightly stirring all ingredients together. Serve with steamed white rice.
