3 large cucumbers
1 medium red onion
1 Tbsp salt
c cider or balsamic vinegar
2 Tbsp sugar
tsp pepper


Directions:
Directions:
Peel cucumbers or score lengthwise with the tines of a fork. Thinly slice into a bowl and sprinkle with salt, toss. Set aside. Peel red onion and cut in half. Cut each half into thin slices (or onion may be diced). Combine vinegar and pepper. Stir in sugar until dissolved. Mix onions with cucumber slices. Pour vinegar mixture over the vegetables, mix well and allow marinating for at least one hour in the refrigerator. May be served topped with crumbled bacon, chopped green onion and/or chopped hard boiled eggs as garnish.
