Leaf Lettuce 2 pkg. 3 oz cream cheese 2 Tbsp apricot preserves 1 c pineapple tidbits 3 cans (15-1/4 oz each) peach halves
In a small mixing bowl, beat the cream cheese and preserves till blended. Drain fruit. Stir in pineapple. Place peaches cut side up on lettuce-lined serving platter; fill with cream cheese mixture. Garnish with mint if desired.
