1 1/2 lbs. small new red potatoes, 1 tb. veggie oil, 1 modium choppd onion, 1 small crushed clove garlic, 1 c. chicken broth, 1 c, chopped fresh parsley, divided, 1/2 tsp. pepper

Directions:
Directions:
Peel a strip of skin from around the middle of each potato. Place potoatoes in cold water. Set aside. Heat a large skillet over medium high heat, add oil. Saute onion and garlic for 5 minutes. Add broth and 1/4 c. parsley, mix well and bring to a boil. Place potatoes in a single layer in skillet and return to a boil, reduce heat. Simmer, uncovered for 10 minutes or until tender. Remove potatoes to serving bowl with slotted spoon. Add pepper to skillet and stir. Pour sauce over potatoes and sprinkle with remaining parsley.
