Hot chicken stock (broth)
onions
broccoli
flour
butter
hot milk or cream

Directions:
Directions:
Cook broccoli, onions, and hot chicken broth together. Your choice of amounts. Thicken with a roux made from equal parts of flour and butter. To make roux: heat flour and butter in sauce pan for 5 minutes, but do not brown. Add to broccoli mixture. Then add hot milk or cream.

"This recipe was given to me by the chef, a personal friend, at the Royal Savage Restaurant in Plattsburgh, New York. I made it often as it was Jack's favorite. Use your judgement in amounts of ingredients."
Edith's notes: Suggest using stick blender or whisk to blend broccoli mixture.
