5 lbs. all purpose or white new potatoes
1-2 hard boiled eggs chopped fine
1 small onion, finely diced
1 cup celery, chopped fine
1/2 cup vegetable oil
1/4 cup vinegar
1 1/4-1 1/2 cup Hellman's mayo
salt and pepper to taste

Directions:
Directions:
Boil potatoes, with skins on, until just tender (be careful not to overcook or you'll get potato mush instead of potato salad)
Drain and let potatoes cool a few minutes.
Slide the skins off 1/3 of the warm potatoes and cut them into bite sized pieces. Layer them in a large dish or pan.
Sprinkle on some vinegar, oil, egg, onion, celery and salt and pepper. Peel remaining potatoes and repeat with 2 more layers as above.
Gently toss with mayo until all potatoes are well coated. Transfer into a clean bowl.
Chill and serve. (ok to make a day in advance)

I can remember mom teaching me how to make this potato salad, probably 25 years ago. Somehow, this potato salad has become an item that's anticipated at our families' summer gatherings. It takes a little while to prepare but it's worth the time it takes.
Edith's notes: My daughter Barbara and her husband, Matthew, and family live in Cheshire, CT. Lauren is a junior in high school - Ryan and Justin are both in college. We are truly blessed to be able to have our children and their families living nearby.
