1 1/2 lb farm raised catfish fillets (or trout)
1 large egg
2 tbsp mayo, or salad dressing
1 tbsp butter melted,
1 tbsp mustard
1/2 tsp dry mustard
1 tsp chopped parsley
1/4 tsp garlic salt
1/8 tsp red pepper
3/4 tsp salt,
3/4 cup crushed corn flakes,
vegetable oil
Lemon wedges, parsley sprigs, tartar or cocktail sauce

Arrange catfish in a lightly greased 13x9x2 in. baking dish. Cover with foil and bake at 400 for 20 minutes or until fish flakes when tested with a fork. Drain and flake. Combine egg, mayo, and seasonings in large bowl. Add flaked fish and shape into 8 2 1/2 inch patties. Coat with crushed cereal; place patties on paper towels; refrigerate for 1 hour. Pour oil to depth of 1/2 in. in a large skillet. Fry patties in hot oil over medium heat about 2 minutes on each side or until golden brown. Drain on paper towels. Garnish if desired, serve with tartar or cocktail sauce or both. Serves: 4 Prep: 30-45
