1 frying chicken
2 c. diced walnuts
8 mushrooms
4 T. soy sauce
1 T. cornstarch
2 T. sherry
1 tsp. salt
1 T. sugar
1/2 c. peanut oil

Directions:
Directions:
Dice fresh chicken meat. Dice mushrooms. Mix cornstarch, sugar, sherry, and soy sauce in a bowl and let stand until ready to use.
Fry walnuts in oil until golden brown. Drain on paper towel. Pour out oil until only 3 tablespoons left in pan. Sauté chicken in the hot oil, stirring for 1 to 2 minutes. Add sauce, stir a minute, add mushrooms, and stir another minute or two until chicken cooked through. Remove from heat. Place in bowl and scatter with fried walnuts.
