1/3 cup firmly packed brown sugar
1/3 cup granulated sugar
1 Tblsp cornstarch mixed with 2 Tblsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
2 Tblsp butter, melted
6 cups peeled, sliced apples
Pastry for 2 (9 inch) crusts
1 egg yolk beaten with 1 tsp water

Directions:
Directions:
Preheat oven to 400. Mix sugars, cornstarch lemon juice, spices, salt, and butter. Sprinkle over apples and let stand about 10 minutes. Roll out half of pastry to fill into a 9 inch pan. Fill with apple mixture. Moisten egdes with water. Roll out remaining pastry and place over filling. Trim overhang and seal edges. Vent crust by sticking a fork in the top in several places. Brush with egg yolk and bake for 40 minutes.
