Fruit Cream Puffs: Use 1 c whipping cream, 1 c cut up fresh fruit (sweetened with 1/4 to 1/2 c sugar, depending on tartness of fruit.) Sprinkle sugar over fruit and let it stand while whipping the cream. Fold whipped cream into fruit. Slice off top of cream puff pastry, fill pastry and replace top. Makes 8 servings.

Custard Cream puffs: 3/4 c sugar with 6 tbsp flour and 1/4 tsp salt. Beat 4 egg yolks slightly, and add 2 c top milk or cream. Add slowly to flour and sugar mixture. Cook over hot water, stirring constantly until thick (about 15 minutes). Cool and blend in 2 tsp vanilla. Makes enough filling for 10 or 12 cream puffs.

Ice Cream Puffs: Fill puff with ice cream of choice and serve with chocolate, butterscotch, pineapple, hot fudge.
