1 c butter
2 c sugar
4 eggs, separated
1 c ground chocolate
1 c grated, cold, cooked potatoes
1/2 c chopped nuts
1 1/2 c flour
1/2 tsp cinnamon
2 tsp baking powder
1/2 tsp salt
1/2 c cream (or milk)
1/8 tsp salt

Directions:
Cream butter and sugar, Beat in 4 egg yolks, one at a time. Stir in chocolate, potatoes and nuts. Sift flour, cinnamon, baking powder, salt and add to batter mixture alternating with 1/2 c cream or milk. Beat batter well. Beat stiff 4 egg whites and 1/8 tsp salt. Fold into batter. Bake in greased tube pan of oblong pan 9 x 13 at 350 for 50 to 60 minutes.

This cake is delicious without frosting and will keep moist for a week. Be sure not to overbake and be generous with the full cup of potatoes. Keep covered with aluminum foil.
